We have always wanted to create a characteristic drink with chilly foam, and after many tests coconut milk stood out. It had the best taste and the most pretty consistency. From there, we started brainstorming, which fits well with coconut, and the first thing that occurred to me was tropical fruits and mangos. It seemed natural and nostalgic – Dazzling, Tropical and Fun. Perfect for the summer.

Summer in Modern York! We want to create a menu that seemed refreshing and accessible to people, but still enjoy novel flavors. This is a kind of drinks you want to drink during a sizzling walk around the city or spending time with friends in the park. Something lithe, energizing and simply different enough to cause curiosity.

Definitely the band’s effort. I started working on a basic recipe, and then the whole team jumped to lend a hand tune it. Their opinion really helped to revive it, and during these tests we have developed a few years of drinks such as Mango shiny matcha!

Everything is made on its own, from mango syrup to chilly coconut foam. We like to keep straightforward, fresh and made with caution.
How did you work to balance the flavors and create the perfect taste profile?
Mango and coconuts were the flavors that I grew up with my mother, he often made desserts with this combination, so the evaporation was already familiar and comforting for me. But I wasn’t sure how everything would connect with a chilly infusion. When I started testing, I was surprised how well the wealth of coffee combined cream coconut foam with the sweet brightness of mango. He felt layer, but still very basic to drink like something you want on a sizzling day.
