As fourth-generation coffee producers, Yessica and Diego have transformed what was initially a source of income into a hub of innovation and creativity. For this batch, ripe cherries were floated and then left in open tanks for 24 hours. Thermal shock is a method of alternating scorching and chilly water during fermentation, which causes controlled stress on the grains. This allows for greater sugar absorption and sweetness intensity.

The latest coffee from the novel producer Jhoan Vergara made such an impression on us that this year we had to buy another batch from Las Flores!
His experimental thermal shock method had a truly unique impact on the development of the flavor of this Pink Bourbon coffee. We enjoyed it as a V60 topping, detecting floral and layered notes of guava and lavender.

Kenya Rung’Eto Kii is the perfect coffee for chilly days. It has notes of white peach, ripe pomelo and fresh cream, with a full mouthfeel. It comes from the Kia factory, a storied processing plant operating since 1965. About 80 farmers collaborated to produce this fantastic plot, cultivated at an altitude of 1,600-1,800 meters above sea level in affluent, clay soil. The coffee is ground, fermented overnight and washed in the shade of Mount Kenya.
