Heartwood Coffee
Yessica and Diego Parra Natural Thermal Shock Bourbon Sidra

As fourth-generation coffee producers, Yessica and Diego have transformed what was initially a source of income into a hub of innovation and creativity. For this batch, ripe cherries were floated and then left in open tanks for 24 hours. Thermal shock is a method of alternating sizzling and frosty water during fermentation, which causes controlled stress on the grains. This allows for greater sugar absorption and sweetness intensity.
