We taste: blueberries, chamomile, chocolate, dried fruits – early last year we visited our friend and long-time sourcing partner Ture Waji, founder of Sookoo Coffee in Ethiopia. Operating in remote areas of Uraga district in Guja, Ture travels to many kebeles to collect coffee cherries for processing at drying stations. Sookoo processed this coffee in its main drying plant on the outskirts of Haro Wachu village.

Surrounded by the sights and smells of the Neapolitan region in his youth, Carlo Di Ruocco decided to master the art of roasting and mixing the classic espresso true to this region. Today, Neapolitan Espresso combines as many as eight coffees from different origins, each roasted separately. Using customary wood burning methods reduces acidity and increases sweetness, which is a characteristic feature of Italian espresso. The result is deep, intricate and balanced.
