Today we get fresh mountain air in a series of Build-outs functions, visiting a novel coffee bar at Park City, Utah (Elev. 7000 ′). This is Urban Sailor CoffeeRegular leaflets in construction are training again with another novel Cafe project.
For those who are not familiar, will you tell us about your company?
My son Archer and I started Urban Sailor coffee during the Covid pandemic as a coffee business, which at that time can remain a business with food (but we were never a truck with food, we built our first coffee wheelchair on a made motorcycle, which was presented in coffee construction 2021). After the success we achieved with the initial motorcycle coffee cart in 2021, we built our first brick cafe in 2022, which has become a very popular meeting place in the Sugar House district for the last three years. Less than a year after the opening of this first cafe, we had the opportunity to buy an existing coffee baking company and take over their equipment as well as wholesale and subscription (retail) customers.
At the end of 2022, all these relationships were served under the city coffee brand, and we baked all the coffee, which we used in our cafe. In 2023, we opened our second cafe, and it was near the center of Salt Lake City in the newly rebuilt part of the city center, which was called “Post District”. We were lucky that we appeared as a construction in 2021 with Motorcycle Sidecar coffee trolley, and in 2022 with our first brick cafe, so we sent our district structure in 2023 and we were again presented. Over the past two years, we have focused primarily on developing our wholesale baking business and managing our two cafes, but we also had our eyes chosen to the right space to build our next cafe and we have enough space to do what we always wanted to make it a baking space, as well as a cafe. We discovered that the space of about 30 miles east of SLC in the busy Mountain Town Park City at the end of 2024 and signed a lease agreement in January 2025. In the last six months we went through the process of permission and construction, and finally we are approaching the opening date in July 2025.
Can you tell us about a novel space?
The novel space Park City Cafe and Roastra is almost twice as immense as each of our two cafes in Salt Lake City. We have 2000 square feet, which we carefully designed to maximize each square foot. Like our other cafes, through which we deliberately we have no driving and we created different seats for people who want a table, people who like to sit in the style of a bar on the countertop and living room (sofa, leather chairs). One of our sitting places in the bar stands in front of our three -core at an angle Mavam The Espresso machine, the next seating part is directed to our roaster towards the rear cafe, and the third bar will be in our zone. We used many built -in shelves to maintain ordering and ensuring many merchandising spaces. The aesthetics of this novel space has very known topics for us – green walls, a lot of wood (nut and nut veneer) and all black equipment. We wanted people who immediately recognize that there are sailors in urban coffee (if they know our spaces Salt Lake City). One of the additional things in which we really bend down thanks to this novel cafe and roastra is to create a listening room environment, building cabinets behind the bar and head to the bar to accommodate vintage audiophile speakers, amplifiers, table to a table and a 10-inch tape deck. He adds our next passion, which is analog music and our nod to the trend, which began in Tokyo with those bars. For a long time I loved listening to good music on a good stereo while drinking good coffee at home, and I want to create the same environment for guests who come for Urban Sailor coffee.
What is your coffee approach?
Our approach to coffee has remained quite unchanged since we bought our baking equipment in 2022 – we want to buy the best quality coffee and bake any origin to bring out the best features and flavors. Although we love really good coffee with one origin, it turns out that we combine most coffees that we exploit behind a bar, which helps not only as a consequence from season to season, but also allows us to combine captivating tasting notes that complement each other espresso and a filter and a frigid infusion. We created a “house mix” for each of them, but we like to mix it with novel amusing coffees that we can get. We still get most of our coffee through our import partners Royal CoffeeBut we also begin to create some of our direct relationships with some regions. This is an area where we are excited that we can do more in the next few years, because it adds a lot to experience for us and our regular customers who love to hear the stories about where these coffees come from and who develops them.
Any machines, coffee, special equipment set up?
We used the Mavam Mach 2 (two groups) over the espresso meters in our first two cafes in Salt Lake City and we loved the stability of the temperature that these machines have given us over the last three and a half years. We decided to get our first Mavam in terms of the entity (three -group) for this novel space Park City. The wider attitude of three subordinate groups and the distance between the external steam wands will allow us to have two barists comfortably working side by side without hitting each other. We place Mahlkönig e65 gbs on each side of Mavam and using the E65 for a manipulat Pukpress Under both espresso grinders. We will exploit the same Curtis The double brewery, which we have in our other two cafes and Mahlkönig Ek43 on the rear bar for grinding coffee to the filter and a frigid infusion. We have a built -in Kegerator for our popular Nitro Icy Brew from the barrel and we will have a immense fridge for gripping and fridge on the front counter, which will contain our cans of Nitro Icy Brew. We still exploit ours Dierich IR-5 Bake all our coffee, which will be perceptible and perceptible in this cafe. Perhaps we will have to update for larger couples the following year and we will deal with which roasters will match our novel space, providing us with increased capacity.
How does your project consider sustainable development?
In Urban Sailor Coffee, sustainable development has always been in the center of what we do, and when we go forward with our novel construction in Park City, we are still examining practices reflecting this commitment. While each location brings its own unique considerations, we are intended in the way we approach design, acquisition and service. On a larger scale, we still work closely with our international partners and our partners of importing in the US through candid contracts, which ensure transparency, consistency and significant support for breeders at the individual level. We believe that real sustainable development begins with relationships – building trust and longevity at every stage of the supply chain. When our Park City store takes shape, we commit ourselves to learn, adapt and move in a direction that both people and the planet respects. One of my four sons Canon (who is one of our barists part -time), is the direction of sustainable environmental development at the University of Utah and just conducted studies abroad in Greece to learn from one of the leading professors of the environment and sustainable development. Canon’s knowledge on this subject is already informed about some things we want to do and I hope that he will continue to lend a hand us when he graduates next year.
What is your hope for the opening date/month?
We hope that we will be open to the weekend on July 4, 2025 (which is a great weekend in Park City).
Do you work with craftsmen, architects and/or creators you would like to mention?
I would like to mention Cirque Studio The architect and design company, which helped us introduce our vision of space in a very detailed project and helped us deal with all permits processes that proved to be more hard than we expected (mainly because of doing this after location). I would also like to shout Jim Clifford (general contractor) and NDI Skinner (Sub Contractors) who were great in adapting and creating this project.
