What inspired the creation of this drink?
We wanted to create a drink that resonates with our guests and celebrates the flavors of the season. Who created this? Individual? Team effort?
Strawberry matcha was a very team effort. Our Retail OPS team is regularly found in research and development, where we study potential ingredients and drinks, which in our opinion will excite our guests. We focus on obtaining the ingredients of which we are proud and we spend a lot of time tasting, adjusting and refining, until we land on something that we all love. Like our guests, everyone in the team has different palates and preferences, so achieving a consensus is both a challenge and joy. This process, finding something that we are all excited about mirror, our goal, which is also a drink in which our guests will also fall in love.
Are there any unique or local ingredients in this drink?
Strawberry matcha is made of basic, high quality ingredients. We exploit ceremonial mats from Japan, our own organic strawberry purée, the choice of milk and a bit of organic cream for Strauss. Combining carefully obtained ingredients with our own preparations from scratch, we are able to emphasize freshness and quality in each sip.
How did you work to balance the flavors and create the perfect taste profile?
When developing a strawberry matcha and any drink in our menu, we always approach it through the lens of who we are and what we want to present: our hero’s ingredients, coffee and tea. Our goal is to create something accessible and delicious while maintaining balance just in time, sweet enough to feel indulgent, but still matches. When developing regulations, we carefully acquire and create ingredients that allow this balance, testing and improving until we land on the perfect profile. We also offer modifiers so that guests can adjust their drink, regardless of whether they prefer it sweeter or more restrained.
What kind of tea/tisane is used in this drink?
We exploit the ecological matcha from Aiya, a family manufacturer in Nishio, Aichi Prefecture in Japan. Aiya has been creating a unique matcha for over 130 years.
Does this drink work both balmy and frozen? Did it affect the recipe?
Strawberry matcha is served only frozen. Perfect, we try to create drinks that work beautifully both balmy and frozen, and we do a lot of development to enable it. However, in this case, when we tested the balmy version, the way the Purée fruit interaction with Matcha did not create the taste or consistency that we considered our guests. Instead of a compromise on quality, we decided to start it as a frozen drink and it was absolutely worth it.
Would you recommend any pairs of food to connect to it?
Absolutely! Strawberry matcha beautifully combines with several of our freshly baked pastries, but two favorites stand out: our butter, dainty almond croissant and our seasonal berry staff. Both complement the dazzling, fruity notes of the drink without overpowering matcha, creating balanced and indulgent evaporation.
What do people say about it?
Our guests do not have enough strawberries. They love how stunning it looks, it has become one of our most photographed drinks, with lots of photos on social media. In addition to aesthetics, customers talk about the balance of flavors and the quality of ingredients. We even had a few guests to ask us to be a eternal element of the menu.
