Project III: Modern joint tasting of Phil and Sebastian, Onyx Coffee Lab and La Cabra

One of the most fun and enlightening coffee experiences is tasting multiple types of the same coffee – or as close to it as possible – side by side. (Nippy in a deeply nerdy way, but maybe that’s the only way something can be nippy anyway.) That’s what makes bubbles so captivating. Even production bubbles where compact changes from batch to batch can be detected.

There is also a modern collaborative project that takes this idea to a modern level. It’s called Project III and brings together three renowned roasters from three different countries, each of which offers its own approach to one producer. pre-order now.

Announced yesterday, November 4volProject III is Calgary’s brainchild Phil and Sebastianwho recruited Arkansas Onyks Coffee Laboratory and Denmark Goat so that everyone can choose a batch from a specific producer to present their approach to smoking. For the inaugural release, the trio chose to highlight Mauricio Shattaha’s work at Finca La Negrita in Tolima, Colombia. All coffees roasted for filter brewing and selected by them are: red goose processed in honey (La Cabra), goose processed in anaerobic honey (Onyx Coffee Lab) and partially washed red goose (Phil & Sebastian).

“We couldn’t imagine a better producer to launch this project than Mauricio Shattah. He is an innovator who has redefined coffee processing in Colombia and beyond. His coffees are multi-layered, complicated and reflect his groundbreaking work with honey and natural processes,” states Phil & Sebastian co-founder Sebastian Sztabzyb. “Project III is our way to celebrate this common pursuit. Honoring the producer, the roastery and the craft that unites them.”

The result, according to their website, is “a conversation over coffee that reveals how terroir, process and roasting converge to create extraordinary diversity from a single origin.” Future releases will include Phil and Sebastian and other roastery contributors and are expected to be released three times a year.

Each Project III box set contains 80 grams of coffee from each roaster (240g total) and can be pre-ordered for C$210 ($149) through the Phil & Sebastian store website. It can also be purchased at La Cabra’s for $150 American side for people hesitant about tariffs.
