One of my firm beliefs about coffee, some might even call it a balmy take, is that: Biscoff and a cup of coffee on a plane is an S-level experience. This is alchemy. The sweetness of the cookie, the bitterness of the coffee (no matter how objectively disgusting it is), the fact that I’m at the beginning of an adventure – or on my way to a much-needed rest after it. I’ll take this to taste Gesha’s heat-shocked double fermentation any day of the week and twice on Sundays.
That means it’s a really substantial day for me because Biscoff is making a recent cookie, the Biscoff Sandwich Biscuit Espresso.
The recent sandwich sponge cake, officially announced last week, is a collaboration between Belgian brands Lotos Bakeries AND Weareone.worldthe former is a cookie manufacturer and the latter is the brand behind a series of global electronic music festivals The land of tomorrow. I’m not entirely sure how three days of sleepless dancing to EDM music could require making an espresso cookie, but I don’t argue with the results.
Biscoff Sandwich Cookie Espresso basically sounds like what would happen if Peanut Butter made a few changes behind the bar. According to press release“combines Biscoff’s iconic caramelized flavor and crunchy texture with a refined espresso-flavored filling” that was “developed exclusively for this partnership.” And the cookie itself is getting a facelift. Instead of the word “Lotus”, the cookie will now be engraved with the Tomorrowland logo.
The limited-edition snacks will debut at Tomorrowland in Belgium later this year in July, and will begin rolling out to select European retail markets shortly thereafter. It will then move to Asia as part of Tomorrowland in Thailand, where it will then expand into broader retail operations in the Asia-Pacific region.
This means Biscoff Sandwich Cookie Espresso will only come to North America via back channels in the sweets gray market. I’ve never wanted an electronic music festival so badly that I wouldn’t be interested in coming to America.
However, not all hope is lost. Tomorrowland in Thailand falls in overdue December, giving the sandwich cookie a full four months to reach Tokyo in time for the 2027 World Barista Championships. So there’s one more reason to go to Japan for the WBC, as if one of the world’s greatest cities for coffee and everything else wasn’t already enough. Yes, but an espresso Biscoff Sandwich Cookie wouldn’t hurt either.
