Vigilante Coffee plans to open a Vista location
Chris Vigilante grew up on the East Coast, learned his coffee in Hawaii, and now lives in San Diego County, running coffee shops on both coasts. Chris, Founder and CEO Vigilante Coffee Companyfounded his coffee empire in Maryland and opened a West Coast headquarters and roastery in Oceanside in overdue 2021. Now, he’s looking to expand into North County, opening a location in Vista this fall.
The up-to-date space will be next door to Tradecraft Farms Cannabis Dispensary on E. Vista Way. Chris says the 3,500-square-foot Vista space will have a similar energy to their Oceanside location (think: open space, high ceilings, lots of plants) mixed with a few “stone-friendly things” to appeal to those visiting the cannabis store next door. Vigilante Coffee Company sources and roasts what Chris believes is some of the best coffee in the world, while also making the coffee approachable — and part of the neighborhood.

First-generation Vietnamese-American family shares family-inspired dishes at farmers’ market
Trained in her family’s kitchen by her parents, who were refugees in Vietnam, Tracy prepares dishes using customary Vietnamese flavors and serves them on crispy baguettes called bánh mì. Her signature dish is “Here, Piggy Piggy,” a bánh mì with braised caramelized pork, pickled carrots, daikon radishes, Persian cucumbers, cilantro, garlic mayo, and soy sauce. Before she starts serving at farmers markets, she takes orders through Uber Eats and DoorDash from her ghost kitchen, My Foodie Kitchen, in El Cajon.
