There’s a lot to love about Kansas City. For Sprudge readers, that means coffee, of course, from the iconic Broadway Cafe (opened in 1992) to lively novel spots like Cortadito, Good Karma, Origin Coi Nuon and more. The city is also home to a flourishing art and design scene, great restaurants, incredibly delicious tacos and banh mi, and one of America’s best wings and beer joints (Peanut on Main) and yes, barbecue, although if you *only* look to KCMO for directions, you’re missing out on a lot of other great things.
Let me add to this list of attractions Coffee roastery offerwho currently roasts in KC and plans to open an expanded full-service coffee bar later this summer. Sometimes at Build-Outs we feature polished cafes that are ready to serve, but we especially love these early glimpses of cafes that are still under construction and waiting to be born. Let’s take a closer look.
For those who don’t know, can you tell us about your company?
Provis Roasters is a roastery and coffee shop in Kansas City, Missouri, founded with one mission: to bring competitive-level specialty coffee back to our city. We started roasting coffee earlier this year in a facility equipped with an SCA-certified coffee lab, and in just a few months we will open a two-story, 6,000-square-foot facility.
Our work is based on four values that we believe are too often overlooked in the coffee world: craftsmanship, hospitality, beauty and stories. These values shape everything we do – how we source our beans, how we design our café, how we treat our customers and how we prioritize our employees.
Just over a month ago, we launched Provis to the public and the response has exceeded all expectations. We exceeded our initial sales goals, sold hundreds of bags in the first few days and watched as several products in our reserve range quickly sold out. We source directly from world-class producers like Edward Norena and Juliana Guevara, and when we started the company, we gave our roastery one instruction: forget about the budget and choose the best beans you could dream of. This uncompromising standard is exactly what we want to bring to specialty coffee, not only in Kansas City, but beyond.
Can you tell us something about the novel space?
The novel space is located in the heart of North Kansas City and will be two stories high. We will have plenty of comfortable seating with plenty of electrical outlets and a fireplace to enhance the guest experience. There will be a cupping laboratory on the first floor, which can be rented as a conference room or for one group Killer on Saturdays off at the bar.

What is your approach to coffee?
My philosophy over the years has been to be accessible to all walks of life looking for a good cup of coffee. Throughout my career, I developed many relationships with producers that helped tell the seed story to everyone who watched my show. At Provis, we focus on delivering uncommon varieties, experimental processes and distinctive coffees from producers directly from the farm. We want to put aside any pretensions and remain approachable so that our guests can feel free to ask questions and delve deeper into what we have to offer.
Any machines, coffees, special equipment in the queue?
We are thrilled to have it La Marzocco Road, Poursteadyand Slayer upstairs on Saturdays off at the bar.
