We love the narrative arch here in coffee construction and Karol Coffee Co. It offers a story and then a bit. What began as a garagist baking project, and then went to mobility in a “can” camper, is now a stunning novel coffee bar in Saint Paul, Minnesota. Up-to-date and classic at the same time, this charming compilation is worth taking a closer look.
For those who are not familiar, will you tell us about your company?
We began to bake coffee in the garage and sell to friends, family and neighbors. We arrived at several markets, expanded our range and scaled a bit. Then we modernized the 1963 arrow “Consul” and went out into the streets. Business has grown and we were able to buy and renew the classic Saint Paul building for our first brick and mortar location.
Can you tell us about a novel space?
1503 Hamline Ave. N. is a classic residential/commercial building Saint Paul. The first floor is a shop windows, and the second floor is a flat with a two bedroom in which I and my wife lived. The building has been many things over the years: a corner shop, a frame shop, a kindergarten, and now … a cafe. We tried to keep the Space Classic project and timeless with several entertaining newfangled details.
What is your coffee approach?
Like our approach to the building, our menu has all the classics with entertaining newfangled twists. Our goal is to build drinks that read like cocktails, fun and taste forward. We also get and bake our own coffee, which allows us to offer entertaining, unique coffee for drip and transfer.

How does your project consider sustainable development?
We employ all compostable, as well as ceramics for our offers here.
What is your hope for the opening date/month?
We opened on 29.02.25.
Do you work with craftsmen, architects and/or creators you would like to mention?
Our ceramics come from a potter on the street, Ceramic sandwich. Our brand was designed by our good friend Jared Tuttle. We designed space.
